In February, the <i>New York Times</i> announced the success of a large clinical trial showing that the Mediterranean diet prevents heart attacks and strokes. A different study at the UT Health Science Center San Antonio may have an answer as to <i>why</i> a balanced diet rich in fruit, vegetables and olive oil works.
